Spring in Cabo

It’s definitely Spring in Southern Baja. The weather is beautiful, although we swap swimsuits for sweats at the drop of a hat this time of year. We got quite a bit of extra rain this winter, which has the desert blooming like crazy.

What’s cooking? The poblano peppers are maybe the best I’ve ever seen, everywhere I shop! They are extra large, meaty and glossy deep green, with big curling stems that look fresh cut. I’ve made cream of poblano soup several times in the last month, and plenty of roasted poblanos stuffed with everything imaginable.

Our local organic market is loaded with fresh produce, including an amazing array of cherry tomatoes which, roasted with onion, garlic and serrano peppers, makes the easiest and best salsa imaginable.
